Matcha Madness Balls

This weekend a few of us girls went out into the country side to go horse riding. I have not been on a horse for about 20 years, but a very good friend of mine is getting married so we decided that instead of a crazy night in Berlin, we would spend the day out of the normal "busyness" and have a day out in the wild with nature. And it was exactly what the doctor ordered! Time out, new environment, out of my comfort zone, and most importantly a lot of giggles with a lot of good friends!

It made me think, we will always make time for the things that are important to us. I spend a lot of life feeling very busy, but I always make time for the things that I love. Time is Earth's currency, we exchange our time for money, we must allocate time on the things that are necessary for our survival, like sleeping and eating, we spend our time on things we love. We don't have an unlimited supply of time so I think it is important to think how we spend what has been given to us. Busy doesn't always mean productive. I want to be really purposeful about how I spend time. I want to make sure I can make time for the things that are important in my world... ultimately this is the people and purpose in my world.

I made these Matcha balls to take with us on the train in the morning to give the girls a little wake up boost... as we left Berlin super early in the morning! I warned them all that they were going to be a little intense, because not all of them are used to the strong flavours, but I had 10/10 positive responses and they really enjoyed them. So I thought this would be a good one to share with you all here... For those who need a little boost or are struggling to find the time for things.

Matcha Madness Balls- makes 10 - 12 balls

You will need:

1/2 Cup Pistachio Nuts
1/2 Cup Almonds
2 tbsp Flax seeds
2 tbsp Hemp seeds
200g pitted dates
1 heaped tbsp Organic Matcha Powder

Method:
As always, these are super simple! Throw all of the dry ingredients into the blender, so the nuts, seeds and Matcha all blend together. While this is happening you can soak the dates in boiling water to soften them up. Once it's blended together making a fine powder, pour it into a bowl and put to one side.
Next, throw the dates into the blender until they are all mashed up... if you have a really high powered food processor you may just be able to do it all in one go but I find this way much easier. once it's all blended add it to the rest of the mixture and give it a really good mix together with a spoon. It should all start to clump together.
Then you just have to spoon out little lumps and roll them into balls. Put them in the fridge to set for an hour or two then you have the perfect little power energy balls, from matcha with love!

So I have the "thumbs up" from the girls on these! I still think they are quite intense so you could always sweeten it up or use less matcha powder if you're not keen on the taste. Either way they will keep in your fridge for up to y week and they are full of goodness, plant based proteins, nutrients and natural energy.
I hope you have a fantastic week and you find the time to do things that you love!

Happy Monday xxx
